Harvest Pork Loin Chops

  • 4 Pork Loin Chops, Center-Cut
  • 1 Onion, Yellow sliced thin
  • 2 Red Delicious or Honey Crisp Apples, sliced
  • 2 Tbsp Marcum Smokey Mesquite Seasoning Rub
  • 16 oz Pickwell Farms Mixed Vegetables
  • 2 Tbsp Medeiros Olive Oil
  • Marcum Salt & Pepper, to taste
  1. Preheat oven to 400℉.
  2. Season both sides of pork chops with Marcum seasoning.
  3. Heat olive oil over medium-high heat in a large skillet. Once hot, place pork chops in skillet and sear for 2 minutes on each side
  4. Line a baking sheet with aluminum foil. Place the pork chops on foil and cover with sliced onion and apples.
  5. Cover with additional aluminum foil and crimp the edges of the two pieces together. Place the sheet into pre-heated oven for 16-18 minutes.
  6. Prepare mixed vegetales based on packaging instructions while pork chops are baking.
  7. Serve pork chops with apples, onions, and mixed vegetables.
